The little stainless-steel tree in the middle is one of those created in collaboration with our apprentices for the Kids’ Action Day, where the FRITSCH Kids assembled them from kits and decorated them to their hearts’ content.     ✨ Craft meets patience – my new spelt-rye bread ✨ In my small test bakery, I had the chance to create a bread that combines tradition and innovation: - 70% spelt flour for a fine, nutty flavor - 30% rye flour for a robust aroma and structure - Psyllium husk as a natural freshness keeper – a clean label ingredient that keeps the bread moist longer The production was a three-day process: - 30% of the flour was fermented for 24 hours - Followed by a 24-hour cold proofing - On the third day, the bread finally went into the oven 🔥 The result: An aromatic, moist bread with a rustic crust – proof that patience and natural ingredients are the best partners. 👉 For me, this bread is not just a baking result, but a statement for sustainable craftsmanship and mindful enjoyment. #Bakery #Craftsmanship #CleanLabel #Spelt #Rye #Fermentation #FoodInnovation
