US cultivated meat startup Mission Barns has secured USDA approval for its facility and product labels. It comes three months after the FDA issued a 'no questions' letter for its cultivated pork fat, and clears the way for its hybrid meatballs and bacon to debut at Fiorella Restaurant Group and Sprouts Farmers Market this quarter. "It’s a critical milestone that allows us to launch commercially in the US – and one that sets the foundation for regulatory confidence in other countries as well," chief business officer Cecilia Chang tells Green Queen Media. The startup mixes its Mission Fat with pea protein for its meatballs and wheat protein for its bacon, and combines them with "familiar pantry staples like spices and herbs". Mission Barns has raised over $60M to date. "We’re preparing for our next fundraising round to support commercial scale-up, strategic licensing, and global expansion," reveals Chang. Thirty years after consumers discovered an apple that was sweet and so texturally satisfying they never looked back, the Honeycrisp dominates the American market. Buyers could even stomach a premium price, often three times the cost of other varieties. But the farmers who grow it, especially in America’s apple-growing capital of Washington state, often wish they never met it. The same qualities that make the variety so delicious leave farmers griping. “She’s a diva, an absolute diva,” fourth-generation Washington apple farmer Kait Thornton said of the Honeycrisp. Fruit breeders across the country have been racing to create crispier, more flavorful apples that will capture consumer loyalty like the Honeycrisp—but are easier to grow. Some farmers see the Cosmic Crisp as a newcomer poised to overthrow the Honeycrisp. The variety is a love child of the Honeycrisp and a more robust Enterprise apple, producing an eating experience that is reminiscent of its parent but slightly more tart and dense. For farmers, the difference is drastic. The Cosmic Crisp is more resilient, stays fresh longer in storage and its U.S. production is limited to Washington state. In a tough market for liquid milk, many New York dairies have found they can reap greater profits by processing and marketing their own products such as cheeses, bottled milk, yogurt, ice cream and butter. But each of these value-added sectors of the dairy industry come with its own set of production and safety challenges. Adding cheese production to a dairy requires significant knowledge, specialized equipment, proper sanitation practices and potentially a long aging process to achieve the desired flavor and texture. “When milk prices go down dairies say, ‘We’ve got to save the farm’ and they start looking to value-added products,” said Rob Ralyea, manager of the Cornell Food Processing and Development Laboratory. “That’s what I was part of, helping people do things correctly when they’ve made that decision.” Ralyea, who retired in October, oversaw dairy extension programs throughout New York state for the past 20 years, specializing in cheese and artisan cheese production and safety.
