How Hoofprint Biome is reducing cattle methane with probiotics

Kathryn Polkoff, PhD planned on a research career until her co-founder pushed her to try something harder. They agreed on a rule: “If you start a company, it has to be something you’ll work on until your eyes bleed, and something that gets you out of bed every day.” For them, feeding the world without destroying the climate met that bar, so they focused on the rumen microbiome. Hoofprint Biome uses enzymes and probiotics to reshape digestion in cattle so less methane is produced and animals convert feed more efficiently. Enzymes are already familiar on farms, which helps with adoption. The approach fits existing rations and routines and avoids chemical inhibitors like 3-NOP or bromoform used by some seaweed products. Methane from cattle is a major part of food supply chains. Hoofprint works through partnerships with brands, cooperatives and their suppliers so whole networks can cut emissions together. The aim is a solution that can pay for itself at farm level through better yield. Kathryn was recently selected to join the 2025 Unreasonable Food cohort, a collaboration between Mars and Unreasonable Group focused on supporting high-growth entrepreneurs using cutting-edge technology to redefine our food systems and reduce greenhouse-gas emissions from food production.
