🌱 Delighted to share my Nuffield Farming Scholarships Trust report: Enhanced Meat Eating Quality from 100% Pasture & Forage Fed Systems. Consumers increasingly choose grass-fed beef for its story and perceived benefits, but my research across nine countries highlighted a critical challenge: consistency. Too often, eating experiences don’t match expectations – tenderness, flavour and juiciness vary more than they should. 💡 Key insights: 🥩 Keep cattle growing. Slow, static or declining growth undermines eating quality. 🥩 Compensatory growth may boost economics, but it can compromise MEQ outcomes. 🥩 Stress matters. From nutrition to environment, reducing stress protects meat quality. 🥩 pH testing 24hrs post-slaughter is a simple way to flag potential issues. 🥩 The UK needs a mechanism to measure and reward eating quality. 🌍 From Uruguay’s traceability to New Zealand’s grass-fed Wagyu and Australia’s Meat Standards system, global examples show how eating quality can be delivered; and rewarded. 🇬🇧 My conclusion for the UK: If we want to market grass-fed beef as premium, it must eat well every time. Thanks for this - it really resonates with my experience and important for us all to be aware of how to manage the key factors. The pH measure is perhaps something we can use more to inform best practice and monitor efficacy of management - thanks for the detail on that in your appendices. I'm going to see if it is possible to get it for each carcass...

I saw this in Australia, especially pertinent for an export focused industry there. Really interesting that halting growth impacts eating quality, would be keen to learn more

Really informative points in this report Jock. It has made me remind myself or other factors in the sector when it comes to MEQ. Glycogen Bin is a fine example which I totally forgot about.........I recieved this information when I was training in early 80's.to be a butcher. Hope this is read far and wide as it is really important we gain some form of MEQ standard in the UK. Well done and I really enjoyed reading it Sir.
