As our R&D Principal Scientist, you will play a pivotal role in advancing the potency, bioavailability, and scientific validation of our ingredient portfolio. What You’ll Lead: • Develop and optimize analytical testing methods with top external labs • Define and validate functional & nutritional specifications for new ingredients • Drive innovation from feasibility → scale-up → launch • Support FSQA investigations and ensure rigorous scientific accuracy • Collaborate with our CSO & Mycology teams on patent strategy and filings • Champion cross-functional execution to deliver high-quality ingredients to market What You Bring: • M.Sc. in chemistry, biochemistry, or related field • 5+ years in functional ingredients, dietary supplements, or functional foods • Experience with analytical methods (MS, DNA sequencing, chromatography, ELISAs) • Strong communication, problem-solving, and project leadership skills • A passion for food science, product testing, and innovation Why M2: You’ll join the largest scientific and mycology team in the U.S. mushroom industry—working in a state-of-the-art, indoor cultivation and R&D environment, backed by founders and leaders who are shaping the future of North American mushroom science.
